TheArroche des Jardins (Atriplex Hortensis) is a Plant Herbaceous Annual of the family of Chenopodiaceae or Des Amaranthaceae according to the phylogenetic classification. Herbaceous plant Annual 60 CM at 1.5 M high.

Rod : it is erected, fluted, rowing and reddish to red in certain varieties.

Leaves : alternate, wide and flexible, more or less closed, glaucous, sometimes reddish, with a more or less floury lower face. The lower leaves, with a relatively long petiole, have a triangular blade, in the shape of a halled iron. Towards the top of the rod, the limbe becomes elongated, almost whole.

Flowers : Small and greenish, they are united in large composed clusters. The flowers pistilée have two free sepales, which form two rounded valves, from 6 to 10 mm wide, around the fruit. The ovoid fruit contains a seed.

The leaves are consumed very fresh, cooked like spinach. When it is young and tender, the sheet can be consumed in Salad. They are often mixed with the leaves ofsorrel to correct theacidity of the latter. Other current species such as adventitas are also edible, but rarely used. The Plant has laxative and refreshing properties. In Cataplasms, The leaves are Emollients.It was used to make a dye in color Blue, similar toIndigo. There is a red variety Red1, used to produce a red dye.

The snow prefers fresh and rich floors in Humus. It is more rustic and of culture easier than theepinard. The multiplication is done by SENIS in the spring of March to May (or in autumn in mild climate1). Lighten the sowing when the seedlings have a few leaves. The harvest consists in taking the tender leaves as needed, before flowering.
